The adventure began in 2018, with the purchase of Domaine Gibert, located on the heights of the village of Saint Polycarpe in the south of the Occitanie region, in the heart of the Upper Aude Valley.
The estate has 15 hectares in one piece, including 7 hectares of vines cultivated between 280 and 400 meters of altitude. The terroir benefits from a Pyrenean panorama and Mediterranean sunshine.
The domain offers different grape varieties: Chardonnay, Chenin, Mauzac, Pinot Noir, Merlot, Grenache and Syrah. This diversity of grape varieties allows us to elaborate our range of wines, named "Les Pipistrelles" which is composed of: AOP Crémant de Limoux, AOP Blanquette de Limoux, IGP white Haute Vallée de l'Aude, IGP rosé Haute Vallée de l'Aude and a red Vin de France.
To perpetuate the tradition and respect our grapes, all the plots are harvested by hand.
