An atypical terroir and
a cold microclimate
This 5 hectare estate is located on the foothills of the Montagne Noire, at an altitude of between 220 and 350 meters.
Depending on the plots, the soils are schists or clay and limestone.
The influence of the Montagne Noire is essential there. It brings in cold air and thus moderates the Mediterranean climate. The days remain warm enough and the nights are cool. The temperature difference between night and day can reach 20 degrees. This thermal amplitude causes a slower ripening of the grapes and an excellent phenolic maturity.

The effects of the altitude, the cold air of the Montagne Noire and the quality of the soil are reflected in the tasting of the two wines of the estate. The slow and perfectly successful maturation of the grapes results in a harvest almost a month behind that of other Languedoc vineyards. Minervois and Minervois La Livinière offer a nice balance, a nice freshness and a lot of complexity.
